For the BLANC DE BLANCS VINTAGE, only grapes from Chardonnay, whose vine selections stem from the Champagne region, were harvested by hand in our mountain vineyards. After the first fermentation in perennial barrels, a second classic fermentation took place in the bottle followed by a 34 month contact with the lees.
